Habitat and origin
Native to freshwater lakes and rivers across Europe, from France and Britain east through Central Europe to the Caspian and Aral Sea basins. The species (Sander lucioperca, also called zander) is the European counterpart to the North American walleye (Sander vitreus), sharing the same genus and many biological characteristics. Pikeperch are predatory cool-water fish that inhabit turbid, deep lakes and slow rivers. Adults reach 1–1.3 m and 15 kg, though culture harvest size is typically 0.5–2 kg. The flesh is white, firm, lean, and delicately flavored, considered one of the premier freshwater food fish in European cuisine. Pikeperch fillets command premium prices in restaurants across France, Germany, Switzerland, and Scandinavia. Aquaculture production is growing, with major research and commercial efforts in France, the Netherlands, and the Czech Republic.
