Days to harvest
540 to 1095 days from fingerling
Lifespan (max)
up to 17 years
Diet
carnivore
Temperature class
cool-water
Difficulty
advanced

Water parameters

Temperature range
428°C (optimum 22°C)
pH
7 to 8.5
Hardness
8 to 30 dGH
Minimum tank
1000 L per individual at harvest size

Feed and growth

Feed protein
45% target
Daily feed (warm water)
1.10% of body weight per day
Daily feed (cool water)
0.50% of body weight per day
Max stocking density
40 g per litre of system water

A 3000g adult eats about 33.0 g of feed per day at optimum temperature. For a roster of 10 fish at adult size, that's around 330 g of feed daily.

Legality

Aquaculture and possession rules vary by jurisdiction and change over time. This table reflects regulations as of the verified date on each row. Verify with your local fisheries or wildlife authority before stocking.

Jurisdiction Status Notes
European Union (bloc) legal Native species across most of Europe; aquaculture established verified 2026-05-13
California prohibited verified 2026-05-13
United States (federal) check local regulations Non-native; most US states prohibit possession verified 2026-05-13
New South Wales prohibited verified 2026-05-13

Jurisdictions not listed here default to "check local regulations". A non-listing is not a green light; rules in your specific county or municipality may apply.

Habitat and origin

Native to freshwater lakes and rivers across Europe, from France and Britain east through Central Europe to the Caspian and Aral Sea basins. The species (Sander lucioperca, also called zander) is the European counterpart to the North American walleye (Sander vitreus), sharing the same genus and many biological characteristics. Pikeperch are predatory cool-water fish that inhabit turbid, deep lakes and slow rivers. Adults reach 11.3 m and 15 kg, though culture harvest size is typically 0.52 kg. The flesh is white, firm, lean, and delicately flavored, considered one of the premier freshwater food fish in European cuisine. Pikeperch fillets command premium prices in restaurants across France, Germany, Switzerland, and Scandinavia. Aquaculture production is growing, with major research and commercial efforts in France, the Netherlands, and the Czech Republic.

Climate and outdoor ponds

Climate classification
temperate (handles seasonal swings)
Outdoor pond zones (USDA)
3 to 8 (winter low around -40°C or warmer)
Heating in a temperate climate
Not required (handles seasonal cool periods)
Cooling in a temperate climate
Required if your summer water temperatures exceed the upper tolerance

Zone bounds reflect year-round outdoor pond viability with no active heating. Anywhere outside the bounded zone, the species can still be kept in an indoor heated tank or a seasonally-managed system. Verify your specific microclimate, as a sheltered yard zone can run a half-zone warmer than the regional rating.

Care notes

A premium cool-water food fish for European aquaponics, directly analogous to walleye in North American systems. Optimal temperature is 2026°C, with tolerance from 430°C. Growth in RAS: 0.51 kg in 18-24 months on high-protein pellet (45-50% protein). FCR is 1.0-1.5 in well-managed intensive systems, which is excellent for a predatory species. Stocking density: 20-40 g/L in RAS with good water quality management. Pikeperch tolerate lower light conditions than most culture species and actually perform better in dim or shaded systems, which suits certain aquaponics greenhouse designs. Water quality must be good: DO above 5 mg/L, ammonia below 0.5 mg/L. The main culture challenges are feed training (pikeperch fingerlings must be weaned from live food to pellets, with variable success rates) and cannibalism in early life stages. Source pellet-trained fingerlings from specialist hatcheries. Pikeperch aquaculture is an active R&D area in Europe; improved domesticated strains are becoming available. Fingerlings from commercial hatcheries in France, the Netherlands, and the Czech Republic. Market value is high ($15-30/kg), making pikeperch one of the most economically attractive freshwater aquaponics species in Europe.
